Watermelon Gazpacho
A little different twist. We’re taking a traditional Spanish-style cold soup and using some summer favorites for a refreshing side.
Equipment
- 1 blender
Ingredients
- 6 cups watermelon chopped
- ½ cup cococnut water
- ¼ cup fresh squeezed lime juice
- ½ tsp jalapeño seeded & diced
- ½ tsp chili powder
- ¼ tsp chipotle chili powder
- pinch of sea salt
- ¾ cup cucumber seeded & diced
- ¾ cup jicama peeled & diced
- 2 tbsp cilantro finely chopped
Instructions
- Place the watermelon, coconut water, lime juice, jalapeño, spices, and salt in a blender, Blend well.6 cups watermelon, ½ cup cococnut water, ¼ cup fresh squeezed lime juice, ½ tsp jalapeño, ½ tsp chili powder, ¼ tsp chipotle chili powder, pinch of sea salt
- Add the remaining ingredients and stir well before serving.¾ cup cucumber, ¾ cup jicama, 2 tbsp cilantro
