Watermelon Gazpacho

A little different twist.  We’re taking a traditional Spanish-style cold soup and using some summer favorites for a refreshing side.

Equipment

  • 1 blender

Ingredients
  

  • 6 cups watermelon chopped
  • ½ cup cococnut water
  • ¼ cup fresh squeezed lime juice
  • ½ tsp jalapeño seeded & diced
  • ½ tsp chili powder
  • ¼ tsp chipotle chili powder
  • pinch of sea salt
  • ¾ cup cucumber seeded & diced
  • ¾ cup jicama peeled & diced
  • 2 tbsp cilantro finely chopped

Instructions
 

  • Place the watermelon, coconut water, lime juice, jalapeño, spices, and salt in a blender, Blend well.
    6 cups watermelon, ½ cup cococnut water, ¼ cup fresh squeezed lime juice, ½ tsp jalapeño, ½ tsp chili powder, ¼ tsp chipotle chili powder, pinch of sea salt
  • Add the remaining ingredients and stir well before serving.
    ¾ cup cucumber, ¾ cup jicama, 2 tbsp cilantro
