Pumpkin Spice Breakfast Quinoa

Quick and wholesome fall breakfast that hits all those right flavors of the season.

  • cup quinoa flakes
  • cup pure pumpkin purée
  • 2 tbsp pure maple syrup
  • cup almond milk
  • ½ tsp cinnamon
  • ¼ tsp nutmeg
  • ¼ tsp ground ginger
  • dash vanilla extract
  • raw pecans or walnuts


  • Combine quinoa flakes, maple syrup, pumpkin purée, and milk in a small saucepan
    ⅓ cup quinoa flakes, ⅓ cup pure pumpkin purée, 2 tbsp pure maple syrup, 1¼ cup almond milk
  • Bring to a boil and then reduce to simmer. Stir constantly until thickened, about 2 minutes.
  • Stir in Spices
    ½ tsp cinnamon, ¼ tsp nutmeg, ¼ tsp ground ginger, dash vanilla extract
  • Transfer to a bowl. Optionally, top with raw nuts.

Almond milk is optional; this can be substituted for any milk you prefer (whole, 2%, etc.).
