Pumpkin Spice Breakfast Quinoa
Quick and wholesome fall breakfast that hits all those right flavors of the season.
- ⅓ cup quinoa flakes
- ⅓ cup pure pumpkin purée
- 2 tbsp pure maple syrup
- 1¼ cup almond milk
- ½ tsp cinnamon
- ¼ tsp nutmeg
- ¼ tsp ground ginger
- dash vanilla extract
- raw pecans or walnuts
- Combine quinoa flakes, maple syrup, pumpkin purée, and milk in a small saucepan⅓ cup quinoa flakes, ⅓ cup pure pumpkin purée, 2 tbsp pure maple syrup, 1¼ cup almond milk
- Bring to a boil and then reduce to simmer. Stir constantly until thickened, about 2 minutes.
- Stir in Spices½ tsp cinnamon, ¼ tsp nutmeg, ¼ tsp ground ginger, dash vanilla extract
- Transfer to a bowl. Optionally, top with raw nuts.raw pecans or walnuts
Almond milk is optional; this can be substituted for any milk you prefer (whole, 2%, etc.).
