Peach Watermelon Summer Salad
A quick and easy light summer salad.
Ingredients
Salad
- 1 watermelon cut into 1" cubes
- ½ red onion finely chopped
- 4 tbsp mint leave extra for garnish
- 2 tbsp extra virgin olive oil
- Salt and pepper (to taste)
- 2 peaches sliced
- 1 English cucumber finely diced
- 1 cup red cabbage shredded
- 4 cups romaine lettuce chopped
Dressing
- 4 tbsp extra virgin olive oil
- 3 tbsp red wine vinegar
- 3 garlic cloves chopped
- 1 shallot chopped
- 1 tsp dried oregano
- Salt and pepper (to taste)
Instructions
- Combine the watermelon, red onion, and mint in a large bowl with the olive oil. Season with salt and pepper and toss to combine. Transfer to a fridge and let marinate for at least 1 hour.1 watermelon, ½ red onion, 4 tbsp mint, 2 tbsp extra virgin olive oil, Salt and pepper (to taste)
- In a small bowl whisk together the dressing ingredients and set aside4 tbsp extra virgin olive oil, 3 tbsp red wine vinegar, 3 garlic cloves, 1 shallot, 1 tsp dried oregano, Salt and pepper (to taste)
- Remove the watermelon from fridge and add in the sliced peaches and cucumbers. Toss to combine.2 peaches, 1 English cucumber
- Divide the romaine and cabbage between the six plates or containers. Top with the watermelon peach mixture, then drizzle with dressing.1 cup red cabbage, 4 cups romaine lettuce
- Garnish with more mint and any other toppings as desired and enjoy!4 tbsp mint
