Peach Watermelon Summer Salad

A quick and easy light summer salad.

Ingredients
  

Salad

  • 1 watermelon cut into 1" cubes
  • ½ red onion finely chopped
  • 4 tbsp mint leave extra for garnish
  • 2 tbsp extra virgin olive oil
  • Salt and pepper (to taste)
  • 2 peaches sliced
  • 1 English cucumber finely diced
  • 1 cup red cabbage shredded
  • 4 cups romaine lettuce chopped

Dressing

  • 4 tbsp extra virgin olive oil
  • 3 tbsp red wine vinegar
  • 3 garlic cloves chopped
  • 1 shallot chopped
  • 1 tsp dried oregano
  • Salt and pepper (to taste)

Instructions
 

  • Combine the watermelon, red onion, and mint in a large bowl with the olive oil. Season with salt and pepper and toss to combine. Transfer to a fridge and let marinate for at least 1 hour.
    1 watermelon, ½ red onion, 4 tbsp mint, 2 tbsp extra virgin olive oil, Salt and pepper (to taste)
  • In a small bowl whisk together the dressing ingredients and set aside
    4 tbsp extra virgin olive oil, 3 tbsp red wine vinegar, 3 garlic cloves, 1 shallot, 1 tsp dried oregano, Salt and pepper (to taste)
  • Remove the watermelon from fridge and add in the sliced peaches and cucumbers. Toss to combine.
    2 peaches, 1 English cucumber
  • Divide the romaine and cabbage between the six plates or containers. Top with the watermelon peach mixture, then drizzle with dressing.
    1 cup red cabbage, 4 cups romaine lettuce
  • Garnish with more mint and any other toppings as desired and enjoy!
