Grapefruit and Greens Salad
This is a light summer salad with grapefruit, avocado, and mixed greens, topped with pomegranate and crushed nuts.

Ingredients
Salad
- 1 grapefruit large, peeled & chopped
- 1 lb mixed greens roughly chopped
- ½ cup raw nuts crushed
- ¼ cup avocado diced
- ¼ cup pomegranate arils
Dressing
- ¾ cup grapefruit peeled & chopped
- 1 tsp pure maple syrup
- ¼ cup strawberries frozen
- 2 tbsp extra virgin olive oil
- 1 tsp dijon mustard
- 2 tsp poppy seeds
- ⅛ tsp arrowroot powder
- 1" orange rind
- 1" grapefruit rind
Instructions
- Blend all dressing ingredients in a blender for 30 seconds or until smooth¾ cup grapefruit, 1 tsp pure maple syrup, ¼ cup strawberries, 2 tbsp extra virgin olive oil, 1 tsp dijon mustard, 2 tsp poppy seeds, ⅛ tsp arrowroot powder, 1" orange rind, 1" grapefruit rind
- Combine the grapefruit and mixed greens in a large mixing bowl1 grapefruit, 1 lb mixed greens
- Pour the dressing on top and toss until evenly coated
- Plate the salad and top with crushed nuts, avocado, and pomegranate.½ cup raw nuts, ¼ cup avocado, ¼ cup pomegranate arils
Notes
If you can’t find arrowroot, substitute cornstarch.
