Fresh and Tasty Tofu Salad
For this salad you're going to make your own croutons…out of tofu. Gonna get some BBQ sauce in there too. This bowl has a lot of flavors going on.
Ingredients
Salad
- 5-6 cups lettuce (any kind, chopped)
- 2 tomatos sliced
- ½ red onion sliced
- 1 avocado diced
- 1 cucumber sliced
- ¼ cup cilantro chopped
Tofu
- 1 block, organic, extra firm tofu pressed
- 2 tbsp cornstarch
- 2 tbsp neutral oil (or extra virgin olive oil)
- 4 tbsp BBQ sauce
Dressing
- ½ cup unsweet soy yogurt
- ¼ cup plant-based mayo
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp dried chives
- 1 tsp fresh parsley
- ½ tsp dried dill
- ½ tsp sea salt
- unsweet soy milk or water splash of, to thin
Instructions
Dressing
- Combine all dressing ingredients except the milk in a bowl and mix well.½ cup unsweet soy yogurt, ¼ cup plant-based mayo, 1 tsp garlic powder, 1 tsp onion powder, 1 tsp dried chives, 1 tsp fresh parsley, ½ tsp dried dill, ½ tsp sea salt
- Just before serving, add a couple of splashes of milk or water to the dressing to thin it to your desired consistency. Serve with the salad on the side.unsweet soy milk or water
Tofu
- Drain and press the tofu to get out as much water as possible. Cube it and place into a container. Sprinkle the cornstarch then close the lid and shake to coat.1 block, organic, extra firm tofu, 2 tbsp cornstarch
- Heat a large pan over medium-high heat and add the oil. Fry the tofu, flipping as necessary until it is golden brown and crispy. Turn off the heat and add the BBQ sauce. Mix to coat.2 tbsp neutral oil, 4 tbsp BBQ sauce
Salad
- Cop all your vegetables and place them in a large salad bowl.5-6 cups lettuce, 2 tomatos, ½ red onion, 1 avocado, 1 cucumber, ¼ cup cilantro
- Add the tofu cubes and toss to combine.
- Serve with the dressing on the side.
