Cantaloupe Cucumber Salad

Summer cantaloupe. One of my favorites. Another favorite: fresh cucumbers. We're taking both and turning them into a fresh summer salad.

  • 1 cantaloupe large, balled or cubed
  • 1 cucumber large, cut into thin ribbons
  • 1 lemon or lime juiced
  • 2 tbsp water
  • pinch of sea salt
  • 10 basil leaves coarsely chopped


  • Using a melon baller, if you have one, create as many balls from the cantaloupe as possible and add them to a large salad bowl. Alternatively, cube the melon.

  • Cut the cucumber into thin ribbon strips and add to the bowl.

  • Combine the lemon juice, water, and salt in a small bowl and whisk to combine.
    1 lemon or lime, 2 tbsp water, pinch of sea salt
  • Add the lemon mixture and basil to the fruit and toss to combine.
    10 basil leaves
